Potato Salad

What dishes do you just have to make in the summer? For me, one of them is potato salad. I make mine with a cooked dressing.

I start the process by peeling, cutting up, and cooking the potatoes. Don’t forget to salt the water so that your potatoes will be flavorful.

I like hard boiled eggs in my potato salad, so I get those going while the potatoes are cooking.

Chop your raw ingredients. I use celery, sweet onion, and sweet pickle. You can see in the picture that I added a dollop of mayo. (Actually it is fat free Miracle Whip because I don’t like mayo.)

Make the dressing while the potatoes finish cooking.

Cooked Dressing

1/2 cup vinegar
3 T butter or margarine (I use less)
2 eggs
3 T sugar
1 T flour
1 T dry mustard
1 tsp salt
1/2 tsp celery seed

Heat vinegar and butter until melted. Mix eggs and dry ingredients. Mix with vinegar and butter. Cook slowly until thick, stirring constantly.

Peel, and roughly chop the hard boiled eggs.

Gently mix it all together. This potato salad is best if it sits in the refrigerator overnight. Enjoy!
