Country Living’s Roasted Tomato Sauce

This Roasted Tomato Sauce is the best recipe that I’ve tried in a long time.  It’s easy and tastes incredible.  I found it in the September 2011 issue of Country Living.

How to Make Roasted Tomato Sauce

Ingredients

2 1/2 lb plum tomatoes, quartered
1 yellow onion, diced
1 green bell pepper, cut into 1-inch chunks
1 red bell pepper, cut into 1-inch chunks
1/2 cup EVOO
1 1/2 tsp kosher salt
1/4 tsp crushed red pepper
1/2 cup chopped fresh basil
2 tsp fresh oregano   ( I used way more)

Instructions

Preheat oven to 375 degrees. In a 9×13” baking pan, toss together tomatoes, onion, bell peppers, oil, salt, and crushed red pepper.

This recipe can easily be doubled or tripled, just increase the size of your baking pan as needed.  I’ve found a large roasting pan to work well for large batches.

Roast for one hour.

Remove from oven and fold basil and oregano into vegetables.

Cook for 30 minutes more.

In a food processor or blender, blend vegetables until pureed.

Use this roasted tomato sauce immediately, refrigerate for up to 2 weeks, or freeze.

The first batch that I made went into the freezer for pizzas this winter.  Pizza is a quick and easy after work meal to make when I’m tired and don’t feel like cooking.

This roasted tomato sauce is wonderful on pasta.  Use it as is for a vegetarian meal or add cooked ground beef or sausage for a heartier meal. 

I liked the taste of this so much that I made two more batches for us to eat over pasta this week.

  3. This sounds awesome! I have a recipe where you put the roasted tomatoes and roasted smushed garlic right on the pasta- no blending and no other veggies. It’s to die for, but this sounds like a great sauce with that yummy roasted flavor. And on pizza! Yum! I want some now!

    I love the pre cooked sauce!! Isn’t it the best to just grab it out of the freezer. Always makes dinner go soo much faster.

  7. This recipes looks delicious Paula! I’ll have to try it. My brother brought me bags and bags of red bell peppers and I’m eating at least one per day and gave 80% of them to friends and co-workers. This would be a great way to use up some more of them!
