Finally the Weekend

The past week was l.o.n.g…. I didn’t think the weekend would ever get here! Next week looks even worse, so I’m going to savor every minute of my two days off.

I made this for dinner last night. It’s one of my “go to” recipes when I can’t think of anything else to cook. It’s also quick and easy.

My notes:
~The oil in the anchovy can is enough. I didn’t add the 1/4 cup of EVOO.
~I omitted the butter.
~I used more garlic.

Farfalle with Broccoli Recipe courtesy Giada De Laurentiis

1 pound farfalle pasta
2 heads broccoli, trimmed to florets (about 4 cups)
1/4 cup extra-virgin olive oil
4 tablespoons butter
3 garlic cloves, chopped
5 anchovy fillets, diced
1/4 teaspoon red pepper flakes
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/2 cup grated Parmesan

Bring a large pot of salted water to a boil over high heat. Add the pasta and cook, stirring occasionally. After 5 minutes, add the broccoli florets to the pasta and stir and cook for another 4 minutes. Drain pasta and broccoli, reserving 1 cup of the pasta water.
Meanwhile, in a large skillet, heat the olive oil and butter over medium heat. Add the garlic, anchovies, and red pepper flakes and cook for 5 minutes. Add the broccoli, pasta, salt and pepper and toss. Add some of the reserved pasta water, if necessary, to make a light sauce. Transfer to a serving platter and sprinkle with Parmesan.

We are headed to Wintergreen for the night. Our good friends invited us to join them for a tennis clinic Saturday afternoon and Sunday morning. We’ll stay in their condo. I’m really looking forward to the clinic. I haven’t played all week because my elbow and forearm have been hurting. I hope that my arm will not bother me this weekend.

Wintergreen is a little over an hour away and is probably one of the prettiest places in VA. I grew up in that area and worked there for ten years. One of the chefs that I worked with is still there and I’m going to drop by to see him this evening. I haven’t seen him since 1993! I work with his sister, so I’ve kept up with him through her. There’s a band playing tonight that we all want to see, so I predict that it will be a fun evening.

Since we will be so close to her house, we’ll visit my mom Sunday afternoon. I haven’t been to her house since early August, so I’m looking forward to seeing her.
