What a great weekend. Now it is Monday….Sigh….
Supper Club was so much fun. Everyone had a great time and agreed that we are really going to enjoy our group. I ended up using my Lenox china and was short one plate. I was sure that I could pop into Belk or Macy’s (our only department stores) and buy another place setting. Of course, neither store had it in stock, so I found a cheap cream colored plate that worked perfectly. A place setting of this china will be on my Christmas list.
Our food ended up being really good. I made pork tenderloin, scalloped potatoes, and rolls. (I made extra on purpose so that I wouldn’t have to cook much this week.) This is what everyone brought to share:
Couple #1: Appetizer – Harry and David pepper relish over creamed cheese served with
Sausage cheese dip with Frito’s (Very good – I know it doesn’t sound it.)
Couple #2: Salad – Spinach, feta, strawberry with balsamic vinaigrette
Couple #3: Side – Roasted butternut squash with a pumpkin seed pesto
Single #4: Dessert: Apple tart with fresh whipped cream
In other news, Hubby and I finally won a mixed doubles game in our league. Our team won two out of three courts yesterday, so it was a win for our team, too. We are in second place for 3.0 teams. We won’t play again until after Thanksgiving.
