Labor Day Cookout

My mother is coming this afternoon to spend the night with us and to go to the lake tomorrow. She and I are going to the pool as soon as she gets here and then we are cooking out tonight. Hubby’s parents will join us for the cookout. It is hard to believe that it is September 2 and Labor Day weekend. Where did the time go?? I hate that our pool closes tomorrow. It will still be hot here until October.

I’m going to do all of the prep work for our meal this morning so that I can relax with Mama all afternoon.

Crackers with Green Pepper Jelly (I made 16 pints Friday night!!)

Grilled chicken (marinated in soy, lemon juice, honey, and fresh ginger)

Viva Italia Tomatoes (stuffed with Italian breadcrumbs, garlic, basil, and parsley and baked)Roasted Cauliflower

Orzo Salad

Spice Cake (Mama is bringing this.)
