Pumpkin Muffins (A Recipe with Just Two Ingredients)

I needed a treat to take to school on Monday and read about an easy muffin that could be made with just two ingredients.  Two ingredients?  I really wondered if this “recipe” would work and had to try it for myself.  I’m happy to report that it does indeed work and it’s quite good!  The two needed ingredients are a cake mix and a can of pumpkin.

My mixer did all of the work for me and in just a few short minutes the batter was ready.

I used my largest Pampered Chef scoop to neatly scoop the batter into 12 cupcake liners.

20 minutes at 350 degrees and my muffins were ready.

After they cooled in the pan for a bit, I transferred them to a rack to finish cooling.PM5

A sprinkling of powdered sugar makes the perfect finishing touch.

If my calculations are correct, each muffin has 172 calories and 1.6 grams of fat, which isn’t too bad for something that tastes like a real treat.

My friend suggested trying this with pumpkin and a spice cake and I think that suggestion sounds great.

Have you tried this “recipe”?  It’s pretty good for only two ingredients!

  1. These look yuumy! This post made me laugh though because last night I made 2 ingredient muffins (brownie mix and bran with water) and it was an utter fail! Glad you had better luck:)

  2. I always love recipes that start with a cake mix. I’m going to try this with the spice cake mix and see how it turns out. I’ll let you know 😉

  4. I had to come and read this! Two ingredients! For Pumpkin Muffins! Wow! Definitely going to try these. I would add some nuts to mine as my family is craze for nuts as well as being nuts themselves 🙂

    These are something I can bake in the morning while I’m getting ready for work so when everyone wakes up they can have muffins with their morning coffee.

  6. OMG, I just sat back on the couch because I attempted to make Choc. Chip Pumpkin Cake and found out I didn’t have any sugar 🙁 So I turned the oven off, put the eggs back in the fridge and the pumpkin can back in the cupboard. Here I am now catching up on my fav blogs and lo and behold, God sends me an angel, you!!!! I have both and will attempt to make this same recipe, although I may add the choc. chips. Thank you, thank you, thank you!!! 🙂
